In particular since this effect is similar with the administering of mandrake, which was known in the first century. Wine does not kill a person, but wine mixed with a death simulating drug would cause this affect. This is consistent in all chapters that he takes the wine on the cross and when he finishes the wine, he is suddenly finished, giving up his spirit.
